Apéritif Restaurant & Bar restaurant in Ubud

Ubud, Indonesia

Apéritif Restaurant & Bar

Set inside a colonial mansion at Viceroy Bali in Petulu, Apéritif brings Modern European cooking into conversation with Balinese ingredients under Chef Nick Vanderbeeken. The dining room, chandeliers, black-and-white tiles, antique detailing, signals a formal register that stands apart from Ubud's more casual fine-dining circuit. A Star Wine List White Star and an Opinionated About Dining ranking of #364 in Asia (2025) position it within the upper tier of the island's restaurant set.

Ubud, Indonesia
Pizzeria Cavalese restaurant in Jakarta

Jakarta, Indonesia

Pizzeria Cavalese

Here is a proposal for an Italian-Asian fusion concept that combines method and creativity. The name refers to Cavalese, a Trentino village where Dicky Tjhin, a pizza chef and owner, has refined his technique and sensitivity towards Italian cuisine, an experience that continues to influence his proposal. Pizza is at the center of the menu: the dough is inspired by Neapolitan tradition but reinterpreted in a personal way, rolled out into a thin disk with a contained crust. The cooking enhances a light and fragrant structure, designed to support classic toppings and bolder interpretations. Alongside the timeless Margherita and Pepperoni, there are creative proposals that explore spicy territories and Asian influences that expand the vocabulary of pizza without betraying its identity. Highly recommended is the tasty Frutti di Mare, a red pizza enriched with delicious fried calamari. To explore slightly revisited Italian flavors with local ingredients, there are soups, salads, pastas, and risottos. The wine list, with Italian and international labels, maintains balanced prices. The selection of specialty coffees is also of high quality. The atmosphere is cozy, characterized by essential furnishings and warm tones that make the space comfortable. The service organization is efficient, both at the tables and for takeout, managed with punctuality.
