Vilmart & Cie began in Rilly-la-Montagne in 1890. Its 11 hectares of Premier Cru vines lie in Rilly and Villers-Allerand, planted to Chardonnay and Pinot Noir. Laurent Champs leads the cellar, where fermentation begins in foudres and oak barrels and the wines do not undergo malolactic fermentation.
Wines and cellar method
The estate’s own account specifies around ten months in wood before further aging in its chalk cellar. Non-vintage cuvées spend three to four years there; vintage cuvées spend five to eight. These figures explain the house’s production approach without treating oak as a flavor note that every bottle must share.
