Domaine de Montille, one of Burgundy’s most historic estates founded in the 1730s, is today led by Étienne de Montille – the ninth generation at the helm. Known for its elegant, age-worthy Volnay and Pommard wines, the domaine is bringing anextraordinary selection of library bottlesto kick off La Paulée in San Francisco. This exclusive dinner will featureall wines poured from magnums, offering a rare chance to taste perfectly cellared Burgundies in large format, guided by Étienne himself in an intimate setting.
In classic Burgundian style, the evening’s wine journey spans multiple decades. A reception showcasesRacines– Étienne’s acclaimed California project – with sparkling and Chardonnay from Santa Barbara’s Sta. Rita Hills. The dinner then opens with avertical of Puligny-Montrachet 1er Cru “Le Cailleret”going back to 1996, highlighting the evolution of this white Burgundy terroir over nearly 30 years. Next, twin flights ofVolnay TaillepiedsandPommard Rugienspremier crus explore these Côte de Beaune gems across the 1970s, 1980s, and 1990s. A showstopping highlight is the domaine’s crown jewelVosne-Romanée 1er Cru “Malconsorts” Cuvée Christiane– an extremely limited monopole cuvée adjacent to La Tâche – including itsvery first vintage 2005. The grand finale is a taste ofCorton-Charlemagne Grand Cru 2010, a white Burgundy of immense power and pedigree to cap the night.
Wolfsbane, Chef Tommy Halvorson’s newly opened restaurant in Dogpatch, will provide the evening’sseasonal tasting menu. Halvorson’s refined cuisine is crafted to complement aged Burgundy, making Wolfsbane an ideal venue for this magnum-fueled dinner. With only a handful of seats available, this opening night promises to be aonce-in-a-generationBurgundy experience.
List of Featured Wines
Racines, Bentrock Sparkling 2018 (Sta. Rita Hills, California)
In Burgundy,Grand Cruwines account for only ~2% of production and Premiers Crus about 12% – thelion’s share of Burgundy (nearly 50%) comes from humble regional appellationslike Bourgogne Rouge/Blanc, Aligoté, and Passetoutgrain. This special lunch,Les Petits des Grands(“The Little Ones of the Greats”), shines a spotlight on those modest appellations vinified with grand-cru care. Four of Burgundy’s top domaines will pour their“little wines”– regional bottlings that rarely get the limelight – demonstrating the quality and character attainable in even the simplest Burgundy designations when crafted by great winemakers.
Meet Four Burgundy Winemakers
This convivial midday feast atArquet(in the Ferry Building) is a unique chance tomeet the winemakers behind the labels. In attendance will be:Antoine Jobard(Domaine Antoine Jobard of Meursault),Anne Morey(representing Domaine Pierre Morey of Meursault),Guillaume d’Angerville(Domaine Marquis d’Angerville of Volnay), andCharles Van Canneyt(Domaine Hudelot-Noëllatof Vosne-Romanée). Each will present a couple of their domaine’s regional wines – from Bourgogne Aligoté to Bourgogne Rouge – all made with the same meticulous approach usually reserved for their Premier and Grand Cru bottlings. It’s a rare opportunity to tastehigh end entry-level Burgundiesside-by-side, each infused with the personality of afamed estateand vintage. Expect vibrant Bourgogne whites and reds from recent vintages (mostly 2022) and even an older surprise (a 2015 Aligoté from Pierre Morey).
Chef Alex Hong (of Michelin-starredSorrel) will oversee the lunch menu at Arquet, ensuring the dishes elevate these nuanced wines. With winemakers at your table andonly a limited number of seats,Les Petits des Grandspromises an inspiring, down-to-earth exploration of Burgundy. You’ll come away with a new appreciation for how“lesser” appellations can deliver greatnessin the right hands.
Domaine Matrot is a six-generation family estate in Meursault whose roots date back to 1835. For decades, Thierry and Pascale Matrot solidified the domaine’s reputation as one of Meursault’s finest, known for pure-fruited, terroir-driven wines. Today their daughters,AdèleandElsa Matrot, carry the torch, infusing youthful energy while honoring tradition. This dinner atThe Morris(a beloved wine-focused bistro in the Mission) offers an in-depth look at Matrot’s wines –from rare red Burgundy terroir to the great white crus of Meursault– in a series of curated flights.
Multi-Vintage Flights
In true Burgundian fashion, the evening beginsà la bourguignonne, tasting the reds first. Guests will experience a vertical of theunder-the-radar Blagny Rouge– a Premier Cru vineyard uniquely suited to both Pinot Noir and Chardonnay – with vintages 2019, 2017, and 2014 illustrating its evolution. After this red vertical, the focus shifts to Matrot’s hallmarkMeursault white wines. A horizontal flight of2020 vintagewhites (village Meursault and Premier Crus like Blagny and Charmes) is followed by a horizontal of2014 vintagewhites (including a Puligny-Montrachet “Les Chalumeaux” and Meursault Perrières).
Comparing these two excellent white vintages side-by-side reveals the nuances of terroir and bottle age. Finally, the dinner culminates with a mini-vertical ofMeursault 1er Cru “Perrières”– 2015, 2005, and a magnificent 1995 – a three-decade perspective on one of Meursault’s most revered climats.
Each flight will be paired withThe Morris’hearty-yet-refined cuisine (think smoked duck, house-made charcuterie, and seasonal fare) to complement the wines’ acidity and depth. With Adèle Matrot hosting, guests can expect personal anecdotes and insights into the winemaking. This dinner is a must for Chardonnay lovers and anyone curious about Burgundy’sred-white dichotomyin the less typical corners of the Côte de Beaune.

There is no better way to explore the nuances of different Burgundy vintages – and appreciate the influence of year-to-year climate – than by tasting, say, 2018 vs 2017 vs 2015 of thesame winefrom thesame producer. Even more, many of the winemakers or estate owners themselves will be on hand behind the tables, pouring and discussing their wines, making this an intimate, information-rich experience.

Held atThe Pearlevent space, the Verticals Tasting will feature a who’s who of Burgundy estates from Chablis in the north to the Côte de Nuits and Côte de Beaune further south. Each domaine offers a mini-vertical showcasing one vineyard or cuvée across three harvests. Attendees can sip aGrand Cru Bâtard-Montrachetflight from Domaine Pierre Morey, then move to aRomanée-Saint-Vivantvertical fromDomaine Hudelot-Noëllat, or compare different vintages ofClos Saint-JacquesfromMaison Louis-Jadot– all in one morning!
With26 domaines and 75 winesin total, plan to pace yourself and take notes. Small bites and breads will be provided to cleanse the palate. TheMarquis d’Angervilleestate in Volnay is Burgundian royalty in its own right – it was this domaine’s founder who famously pioneered estate-bottling in Burgundy in the 1930s, helping preserve quality and integrity for small producers. Today, underGuillaume d’Angerville, Domaine Marquis d’Angerville continues to craft some of Volnay’s most exquisite wines. Thisintimate dinneratAngler(the Michelin-starred restaurant on the Embarcadero) offers a deep dive into d’Angerville’ssignature terroirs, capped by a vertical of its crown jewel monopole. With Guillaume d’Angerville as host, guests will taste the estate’s benchmark Volnays alongside insights from one of Burgundy’s most passionate vignerons.
Clos des Ducs Monopole Vertical
The evening’s lineup featuresback-to-back flights of Volnay’s finest. To start, guests will be treated to Domaine d’Angerville’sMeursault 1er Cru Santenots– a white wine from a vineyard in Volnay (Santenots yields white when planted to Chardonnay) – showcasing a rare facet of the estate’s portfolio. The tasting then transitions into reds with an exploration of Volnay’s premier crus from the superb 2020 and 2018 vintages: expect silky young examples ofVolnay ChampansandVolnay Taillepiedsfrom each year, setting the stage for the finale.
The climax is avertical of Volnay 1er Cru Clos des Ducs– Marquis d’Angerville’s famed monopole vineyard – featuring multiple vintagesspanning over a decade. The restaurant’s bayfront setting and contemporary flair add a special atmosphere to the dinner. Withlimited seatsand wines that seldom appear together, this event is a Volnay lover’s dream. By evening’s end, you’ll have a newfound appreciation for why Clos des Ducs and the Marquis d’Angerville name are spoken of with reverence in Burgundy circles.
Burgundy is steeped in tradition, but anew generationof winemakers is quickly making its mark. This seminar spotlights three rising stars who are redefining Burgundy’s future:Thibault GageyofMaison Louis-Jadot,Alex Bacheletof Domaine Bachelet-Monnot, andCamille Thirietof Domaine Thiriet. Moderated by Burgundy expert Daniel Johnnes, the panel will delve into each of these young vignerons’ personal journeys – how they fell in love with wine, the challenges of taking the reins (or starting afresh) in a region known for heritage, and their philosophies merging innovation with respect for terroir.
New Voices of Burgundy
In an engaging conversational format, attendees will hear candid stories illustrating that Burgundy’s landscape is not as “timeless” as it appears –people come and go, and fresh ideas take root. Thibault Gagey (deputy GM ofMaison Louis-Jadotand son of its long-time chairman) will share insights from one of Burgundy’s biggest négociants – includingMaison Louis-Jadot'swork in both classic appellations and lesser-known terroirs. Alex Bachelet, who with his brother has rapidly earned acclaim since foundingBachelet-Monnotin 2005, represents the innovative spirit in the Côte de Beaune, embracing organic viticulture and precision winemaking. Camille Thiriet, a young micro-négociante who establishedDomaine Thirietin 2016, offers a fresh perspective as an upstart crafting tiny lots of high-quality Burgundy from purchased grapes, including parcels others overlooked.
Each panelist will pourtwo representative winesfrom their production to enrich the discussion. For example, Alex Bachelet has brought a mineral-drivenMaranges 1er Cru La Fussière 2019and a fleshyChassagne-Montrachet 2019; Thibault Gagey offers a look atJadot'srange with aBeaune 1er Cru “Clos des Ursules” 2017(aJadotdomaine monopole) and aClos Saint-Denis Grand Cru 2009from their négociant line; Camille Thiriet pours her vibrantCôte de Nuits-Villages “Aux Montagnes”in two vintages (2021 and 2018) to show how even modest appellations can age. Tasting these wines with their makers’ commentary will personalize the experience and highlight howBurgundy’s next generationbalances continuity and change.
Whether you’re a longtime Burgundy drinker or new to the region, this seminar will give you a refreshed understanding of who is shaping Burgundy today and tomorrow. It’s an inspiring reminder that behind those famous vineyard names are passionate individuals with new stories – and that Burgundy, for all its history, is constantly evolving with each new steward of the land.

TheGrand Tastingis the centerpiece of La Paulée’s Saturday, a walk-around extravaganza where Burgundy’s past, present, and future converge in one room. Held in the stunning glass atrium ofThe Conservatory at One Sansome, this walk-around tasting is anamazing chance to sample the 2023 vintage– a Burgundy vintage so young it’s still pre-release –and meet dozens of winemakerswho crafted those wines. Over100 wineswill be poured, spanning village to Grand Cru, red and white, from Chablis down to the Côte de Nuits. Adding to the festivities, top San Francisco restaurants and artisanal food purveyors will serve small bites to pair with your Pinot and Chardonnay.
100+ Wines from 2023 Vintage
Why the emphasis on 2023? Burgundy’s 2023 vintage has been talked about in hushed tones – yields were low and demand will be high, making these wines particularly hard to come by. Many arebarrel samples or recently bottled– giving you a sneak peek at wines that won’t hit the market until later in 2026. You’ll encounter young barrel samples brimming with energy: imagine tasting a2023 Romanée-Saint-Vivant Grand Crufrom Vosne-Romanée in its infancy, or a2023 Bâtard-Montrachet Grand Crufrom Chassagne-Montrachet well before critics score it. Such legendary wines, from domains likeDomaine Hudelot-NoëllatandFontaine-Gagnard, are rarely accessible to the public even after release, let alonepouring freely in a tasting format. Beyond the big names, you can also discover hidden gems – perhaps a vibrant 2023 Saint-Aubin from Hubert Lamy, or a rich 2023 Nuits-Saint-Georges from Domaine des Lambrays – alongside the people who made them.
The atmosphere is convivial and casual. Winemakers stand shoulder to shoulder with guests, sharing stories (and often sipping each other’s wines). It’s not unusual to see a famous vintner like Jean-Nicolas Méo or Dominique Lafon wandering the room with a glass in hand. Food stations will offer cheeses, charcuterie, oysters, and other bites from local SF favorites, so you can keep your palate sharp. By the end of the afternoon, you will havetasted across Burgundy’s terroirs– from Chablis’ flinty chalk to the voluptuous fruit of the Côte de Nuits – all through the lens of a single promising vintage. The Grand Tasting encapsulates what La Paulée is all about: celebrating Burgundy in a spirit of generosity and discovery.

La Paulée culminates, as always, in its namesakeGala Dinner– an evening of wine, food, and revelry inspired by the original La Paulée de Meursault harvest feast. The 2026 San Francisco Gala will be held under the soaring glass ceiling of One Sansome’s Conservatory and feature a multi-course menu prepared byacclaimed local chefsincludingStuart Brioza(State Bird Provisions/The Progress) andMichael Tusk(Quince/Cotogna).
But the real stars of the night are the winesbrought and shared by the guests. In La Paulée tradition, attendees are encouraged tobring special bottles from their own cellars– often rare older vintages of Burgundy – to uncork and pour for neighbors and winemakers alike. The result is a free-flowing abundance of great wine and a convivial atmosphere unlike any other dinner party.
BYOB: Bring Your Own Burgundy
The Gala is essentially a luxuryBYOBparty at the highest level - many people bring Burgundy but there's an amazing mix of Bordeaux, Champagne, and more! Imagine a table where your 1985RousseauChambertin Grand Cru is complemented by a stranger’s 1999Romanée-ContiLa Tâche; where magnums of vintage Champagne circulate during the opening toast, anddozens of Burgundy luminaries(winemakers from all the participating domains, plus VIP collectors) mix and mingle at each table.
As courses arrive – each dish crafted to pair with the finesse of Burgundy – spontaneous wine comparisons and lively toasts become the evening’s entertainment. Don’t be shy: trading pours with fellow guests is the norm, and you might even get to taste unicorn bottles that make an appearance. Meanwhile, the chefs’ menu will ensure you dine sumptuously: expect the likes of black truffle-laced dishes, exquisite seafood, and decadent game or beef preparations, each course building on the last. The combination of world-class cuisine and extraordinary wines (many trulypriceless, since they come from personal cellars) creates a night ofpure indulgence and camaraderie.
Throughout the dinner, brief interludes acknowledge key people – a salute to Daniel Johnnes (La Paulée’s founder), a nod to the chefs and sommeliers – but there areno long speeches, and definitelyno spitting(at this point, it’s all about enjoyment!). Spontaneous singing of Burgundian drinking songs is known to break out. By the end of the Gala, new friendships are formed over shared wines, and the spirit of Burgundy –one of generosity, gratitude, and joi de vivre– fills the air. It’s a fitting finale to La Paulée 2026, sending everyone home with hearts (and glasses) full.
(Formal attire is encouraged, and don’t forget to bring a special bottle or two to share!)
