At 40 rue Carnot in Mareuil-sur-Aÿ, Billecart-Salmon connects a family story begun in 1818 with a wide Champagne vineyard network. The house farms 100 hectares of its own vines and draws grapes from a total area of 300 hectares across 40 crus, with most fruit coming from within about 20 kilometres of Épernay.
The cellar behind the range
More than 400 small and 24 large oak casks occupy the house’s two chais, alongside stainless-steel vinification. Parcels are worked separately before blending. That range of vessels does not mean every cuvée follows the same recipe: the current Le Rosé blend, based on the 2020 vintage, is 45% Chardonnay, 35% Pinot Noir and 20% Meunier, while Nicolas François 2012 is 60% Pinot Noir and 40% Chardonnay.
How to approach a visit
The house invites direct visit requests but says it cannot accommodate them all. It gives priority to wine professionals, loyal clients and partners, does not accept third-party requests, and will not book more than three months ahead. A confirmed appointment is essential; there is no basis for treating this as a walk-in tasting room.
