Chuka Soba Kamofuku opened in Hachioji in May 2024 as a revival project by owner-chef Miida, who trained at Yamato Manufacturing's ramen school and has run several duck-forward concepts across the western Tokyo corridor, including a kamo-dashi counter operated through a shared restaurant platform in Tachikawa and an earlier Hachioji shop focused on duck and shamo chicken. The current address in Kokadomachi represents what the local press describes as a homecoming project, consolidating that accumulated duck-broth knowledge into a dedicated standalone shop. The cooking logic is clear from the bowl up. The broth layers duck as its primary umami source against Japanese dashi elements, Rausu kombu, niboshi, and iriko, producing a clean, transparent soup rather than anything in the tonkotsu register.
That clarity is deliberate: the kitchen works without chemical seasonings, letting the duck fat and dried-fish mineral notes do the structural work. The noodles are house-made using a three-layer construction, mochi-mochi at the surface, semolina-firm at the core, which gives a bite that behaves differently from standard ramen noodles under the lighter broth. Service runs primarily at lunch, and the shop has attracted enough local attention since opening that reservations are advisable rather than optional.
