In the historic centre of Frascati, this restaurant offers direct, traditional cooking, executed with considerable skill and often faithful to the region’s classics. From the excellent coratella (lamb offal) and other preparations celebrating nose-to-tail cooking through to the canonical Roman pastas (carbonara, gricia, amatriciana, cacio e pepe), it is a celebration of the rather substantial and pleasingly rustic flavours of local cuisine.
