Go here for the incredible gumbos from chef Eric McCree, who was born in Idaho, but whose grandfather, a traveling construction worker nicknamed Tiny, schooled him in New Orleans cooking. The go-to order is Tiny’s gumbo featuring chicken, andouille sausage, shrimp, and crab, or some combination thereof.
