Long Count
Long Count is a chef-led New York City wine restaurant built around aged bottles by the glass rather than the usual young-list churn. Every glass pour carries at least 10 years of age, with Coravin service allowing older wines, including a 2012 Brunello di Montalcino, to appear in a more flexible restaurant format.

The room inherits downtown momentum: late-night energy, a wine-first crowd, and the memory of Soda Club, the 2022 opening Eater noted for mostly natural wines and vegan house-made pastas. Long Count changes the premise without losing that pulse. New York has plenty of novelty-driven bars; this one makes age the organizing principle.
Older wine by the glass shifts the conversation from variety to time
New York wine lists often sell discovery through breadth: new producers, unfamiliar grapes, young bottles moving fast. Here, the point is narrower and more demanding. Every wine poured by the glass has at least 10 years of age, a format enabled by Coravin technology that keeps bottles in service without pulling the cork for one night’s work.
That matters because mature wine reads terroir differently. Fruit recedes, structure sharpens, and place has more room to show. A listed Casanuova delle Cerbaie Sangiovese “Brunello di Montalcino” from Tuscany, Italy, 2012 makes the format concrete: not just Italian red wine by the glass, but a bottle with enough time to make vintage and origin part of the decision.
A chef-led kitchen keeps the cellar anchored in the market
The food side is framed as a chef-led wine restaurant where old wine meets the fresh market. That tension works. A cellar preserves the past; a seasonal kitchen keeps the table from feeling like a museum exercise. In a city where wine bars can drift toward casual snack counter or specialist showroom, the stronger middle ground treats aged glass pours as part of dinner, not a separate tasting ritual.
