Since opening in 2014, Chef Christopher Gould and co-owner Paige Gould have established Central Provisions as a cornerstone of Portland fine dining. Gould, who honed his craft at Boston's acclaimed Uni and Clio, brought his innovative vision to Maine's vibrant food scene. The restaurant earned James Beard Foundation recognition as a Best New Restaurant finalist in 2015 and secured a spot on Bon Appétit's coveted Hot 10 list, cementing its reputation among the best restaurants Portland offers.

The cuisine philosophy centers on a build-your-own tasting menu approach, with dishes organized into raw, cold, hot, and hearty categories. Signature creations include the restaurant's celebrated roasted cauliflower, delicate scallop crudo with uni miso sabayon and caviar, and seasonal Maine specialties like fried local shrimp. The menu showcases Gould's mastery of global techniques—from Spanish-inspired oysters escabeche with smoked persimmon to Asian-influenced bluefin tuna crudo with soy and fried shallots. Wood-fired preparations add depth to dishes like bone marrow toast with red onion jam, while the raw bar celebrates Maine's pristine coastal waters. Plates range from accessible to premium pricing, allowing diners to craft personalized experiences.

The two-level space balances intimacy with energy, featuring an open kitchen on the upper floor where diners witness culinary artistry unfold. Original architectural elements—exposed red brick, polished wood banquettes, and grain sack upholstery—honor the building's maritime heritage while creating sophisticated ambiance. The downstairs bar offers a more casual atmosphere for craft cocktails and small plates. Wine director Chris Peterman curates an Old World-focused selection that complements the international flavors, while the cocktail program draws inspiration from pre-Prohibition classics.

Central Provisions operates with limited upstairs reservations, though the bar welcomes walk-ins for those seeking spontaneous fine dining experiences.
