This is one of the longest-standing Filipino restaurants in Little Manila, opened in 1992 by Renee and Ernesto Dizon, who wanted to serve the neighborhood’s growing population of immigrant nurses. The cooking is no-nonsense, from tortang talong, whole eggplant sealed in an omelet beneath a merry wreckage of pork, to lush tinola, chicken soup streaked with ginger. Sometimes you see the tail of a fish peeking out of a metal pot at the next table. Everything is brown, and everything is delicious. Who needs pretty when the food tastes this good?
