The kitchen drew from two distinct southern Chinese traditions: Cantonese technique and the broader Jiang Nan repertoire of the Yangtze River Delta. That translated to a menu spanning live seafood, double-boiled soups, hand-pulled la mian, and dim sum alongside showpiece preparations such as Peking duck and whole suckling pig. The format suited both the Financial District lunch crowd and larger private dining occasions, with dedicated private rooms accommodating groups that the main hall's 300-plus seats could not contain. The Embarcadero location placed the restaurant at the intersection of waterfront tourism and office density rather than within any established Chinatown or Chinese dining corridor, a deliberate positioning that signalled the group's intent to compete at the top of the city's broader restaurant market rather than within a single ethnic dining enclave. Crystal Jade, founded by Ip Yiu Tung, had built its reputation across Asia before expanding to North America, and the San Francisco flagship reflected that international ambition in both scale and kitchen scope. The restaurant closed in 2018, four years after opening. Its tenure was short relative to the scale of the investment, though the space and concept left a clear mark on what high-end Chinese dining in the city could look like at full scale.
