Café Pinson built its reputation in Paris on a premise that was genuinely rare when it opened: a fully vegetarian kitchen operating under the philosophy of bio santé-plaisir, organic eating conceived as both nourishing and pleasurable rather than ascetic. The menu ran 100% vegetarian, with a large share of dishes also vegan and gluten-free, drawing on seasonal and ancient vegetables, legumes, and locally sourced organic produce. Dishes like a leek and licorice pie, a smoked tofu reworking of the classic petit salé aux lentilles, and oven-baked parsnip fries signalled a kitchen willing to treat plant-based cooking as a creative discipline rather than a dietary concession.
The interior, designed by Dorothée Meilichzon, the architect behind the Beef Club and Hotel Paradis, gave the space a considered visual identity: geometric-patterned tables, wood floors, and stone walls that landed somewhere between Scandinavian restraint and Parisian informality. The mix-and-match seating reinforced the approachable register. The existing summary notes that weekday lunches were the more measured visit, with dinner service running noticeably busier.
The culinary direction came from co-founder Agathe Audouze, a naturopath who selected ingredients with an eye toward their nutritional properties, while pastry and vegan preparations were overseen by American chef Cameil Kaundart. That combination produced a dessert list that included a butterless chocolate mousse and milky tofu sweets with orange blossom, alongside fresh-pressed juices and smoothies. A second location extended the concept beyond the original address. Café Pinson has since closed.
