Pophams Bakery’s photogenic rosemary and sea-salt twists and bacon and maple scrolls have been catnip to influencers since the beginning (2017). Since then, Pophams has grown to three sites (Islington, Hackney and Arcade Food Theatre) and has, at its Hackney site, expanded into pasta (evenings only). The viennoiserie is precisely crafted with three batons of chocolate in the pain au chocolat and a full 27 layers of butter in each pastry. The Marmite, Schlossberger and spring-onion pastry is a study in umami.
