Clayton Wells opened A1 Canteen as a deliberate counterpoint to Automata, his fine-dining restaurant a few doors down Kensington Street — same precinct, different register entirely. Where Automata demanded attention, A1 Canteen asked for none, operating as an all-day canteen with concrete floors, floor-to-ceiling windows, timber banquettes, and an open kitchen that made no pretence of ceremony. The crowd reflected that: tattooed locals alongside businessmen in button-downs, off-duty chefs from around the city stopping in out of professional curiosity.

The menu drew on modern Australian cooking with the kind of specificity that separated it from generic café fare. The muffuletta — a substantial sandwich built around olive salad and deli meats — became the dish most associated with the kitchen, noted by Gourmet Traveller among the dishes worth mourning when the restaurant closed in 2020. Elsewhere the menu moved through curried eggs, grilled kingfish, clams, burrata, and whole flounder: a range that worked across breakfast, lunch, and dinner without forcing any single occasion.

Kensington Street had, by the time A1 Canteen opened, established itself as one of Sydney's more concentrated stretches of considered dining, and Wells positioned his canteen as the accessible end of that spectrum. Pricing sat firmly in the mid-range, making it a practical daily option rather than a destination reserved for occasions.
