Pearl Street gives the approach a distinctly Boulder frame, but the dining idea points east, to the frascas of Friuli-Venezia Giulia: informal gathering places built around wine, food, and regional identity. Frasca Food and Wine opened in August 2004 with that model in mind, producing not broad American Italian dining but a focused reading of Friuli through Colorado, with wine carrying much of the argument.

Friuli as the reference point, Colorado as the lens

Friuli-Venezia Giulia sits at a borderland of Italian, Slavic, and Central European influence, and its food culture rewards precision over spectacle. In Boulder, that regional specificity gives the winery its authority. Michelin-starred and James Beard Foundation Award-winning recognition places the room in a national conversation, but the clearer signal is the narrow brief: a neighborhood restaurant modeled on Friulian frascas, not a survey of Italy.

The wine program sharpens that position. In 2007, Stuckey and Mackinnon-Patterson launched Scarpetta Wines to produce Friulian white wines, later expanding to seven varietals: Frico Bianco, Sauvignon Blanc, Timido Vino - Spumante Brut Rose, Friulano Bianco, Pinot Grigio IGT delle Venezie, Barbera del Monferrato DOC, and Frico Rosso. The list creates rare continuity between table, cellar, and regional thesis.
