The Maidstone

The Maidstone has operated as a boutique hotel at 207 Main Street for years, cycling through several restaurant concepts before LDV Hospitality took over the food and beverage program in summer 2024 and relaunched it under the LDV at the Maidstone banner. The group's track record with Scarpetta, its flagship Italian brand with locations in New York and beyond, informed the direction here: Italian coastal cooking refracted through the Hamptons' own shoreline larder. Chef Jorge Espinoza, who works within the LDV Hospitality culinary network, leads the kitchen.

The menu draws on the same philosophy that defines the Scarpetta properties: seasonal produce, clean technique, and an emphasis on sourcing that makes geographic sense. Long Island oysters, crudos, grilled vegetables, house-made pastas, and quality meat cuts form the core of what's on offer. The framing LDV uses internally, evoking the simplicity of the Italian coast, translates practically into a menu that avoids overcomplicated preparations in favour of ingredient clarity.

East Hampton's Main Street positions the restaurant at the centre of one of the Hamptons' most trafficked summer corridors, though the hotel operates year-round, which distinguishes it from many seasonal Hamptons dining rooms that shutter after Labour Day. For guests staying at the Maidstone, the restaurant functions as an in-house dining room with a regional identity; for non-guests, it operates as a standalone reservation. The combination of LDV's operational depth and a venue with genuine historical presence on Main Street gives this iteration more structural weight than previous concepts in the same building.
