Weissgerber's menu showcases refined Japanese and broader Asian seafood traditions through signature creations like elaborate fruits de mer platters, king crab with bone marrow, and shiso butter lobster. The Robata-grilled selections feature premium Japanese Wagyu cuts, while the omakase experience allows the kitchen to demonstrate its full artistry. The beverage program matches this theatrical grandeur with over 750 wine selections housed in a glass-walled cellar, featuring prestigious labels like Dom Pérignon 2012 and Domaine de la Romanée-Conti. Evening entertainment transforms the space from fine dining restaurant to nightlife destination, featuring live music on Wednesdays, aquatic-themed "Undercurrent" performances on Thursdays, and international DJs on weekends.
