Upper Galilee expressed through blends, not showpiece varietals

Israeli wine often asks travelers to understand altitude, exposure and grape choice together. Here, the clearest argument comes through blending. A Galilean white brings Viognier and Chardonnay together, combining sweetish fruity vitality with delicate acidity. The house red moves in a Bordeaux-Rhône register, using Cabernet Sauvignon, Merlot and Syrah from Upper Galilee vineyards as its benchmark expression of place. The rosé is broader still, drawing on Syrah, Cabernet Franc, Grenache and Sangiovese.

That range gives the visit a useful editorial shape: this is not a cellar built around a single heroic grape. It reads as a study in how international varieties are assembled under Galilean conditions, with acidity, fruit and structure doing the explanatory work.

A modern joint venture with a production-led visit

The institutional structure is unusually explicit. Galil Mountain Winery was established in 2000 as a joint venture between Kibbutz Yiron, with a 33% stake, and Golan Heights Winery, with 67%. That split places it between local agricultural ownership and a larger Israeli wine operator, a useful lens for understanding its scale and polish.
