Not far from the vineyards of Vougeot and Chambolle-Musigny, on the Route des Grands Crus, this château – a listed monument historique – houses a luxury hotel whose Burgundy stone walls are enhanced by contemporary details in wood and Corten steel. Led by Julien Martin (formerly of Château de Collias) and his team, the fine dining restaurant has delightful surprises in store, such as green asparagus with smoked Bresse cream, and glazed monkfish with seaweed and its original red cabbage reduction, reminiscent of a red wine sauce: refined ingredient-led cuisine polished by precise cooking techniques.
