Having earned his stripes in renowned kitchens (Christophe Dufossé, Patrick Henriroux), chef Kévin Dos Santos has set up shop in an old building a stone's throw from the 1 000-year-old church, Église St Pancrace. The decor is understated, with tables upstairs and out on the small courtyard terrace. This 30-something chef crafts his menu to the rhythm of the seasons and the zeitgeist: creamy cauliflower, blood orange and sunflower seed praline; truffle-infused scallop quenelle, celeriac millefeuille, hazelnuts and a reduced jus. The evening menu is updated regularly and calls on more premium ingredients. On weekday lunchtimes, the menu is simpler. The fine wine cellar suits a wide range of budgets.
