Victor Le Bas gives free rein to his personal style of (predominantly local) ingredient-led cooking; Élisabeth Martz provides dynamic and attentive service, in a decor that sees traditional elements blended with contemporary touches. The meal demonstrates a clear and coherent vision: the langoustine bisque and crunchy vegetable starter plays on contrasts; sea bass with salsify and beurre blanc highlights well-suited cuissons; the pear, olive and white chocolate dessert is pitch well-suited.
