1 Michelin Key

Founded by Fumitomo Hayase, formerly behind Aman Tokyo and Amanemu, Azuma Farm Koiwai is a 24-villa property on eight hectares of Koiwai Farm, a 3,000-hectare working estate at the foot of Mount Iwate in Tohoku. The region falls outside the established luxury travel routes around Japan, its identity shaped by Jōmon-period communities and an agrarian mountain culture that the classical ryokan aesthetic never touched. Designer Shiro Miura of Kyoto firm Rokkakuya walked the forest before a single line was drawn, marking which trees to fell and which to build around: the 22 Forest Villas and two Garden Villas use century-old red pine, Koiwai cedar and Iwate chestnut. Dining uses Koiwai produce alongside Sanriku coast seafood; a Nanbu ironware workshop and horseback rides through historic pastures are among the guest experiences.
