Domaine des Païssels is a small Saint-Chinian estate in Babeau-Bouldoux, built around schist hillsides, old goblet-trained vines, and estate-grown fruit. The appeal is not polished wine tourism but a producer-led Languedoc lens: Grenache, Syrah, Carignan, Cinsault, Aramon, Grenache gris, and Grenache blanc shaped by warm southern exposure and lean, fractured soils.
