L’Aperó

Una sorta di gemellaggio fra Italia e Francia: la base è ovviamente la pizza tonda, ottenuta da una buona lievitazione e una attenta cottura nel forno a legna. Sopra, oltre ai classici, moltissimi ingredienti freschi a seconda della proposta, dalle verdure ai funghi, abbinati sempre con estrema precisione e conoscenza e non messi a casaccio. L’ambiente è molto bello, con un bar ricco di proposte per qualunque tipo di abbinamento, la sala è festosa, con un servizio attento e scrupoloso. Le pizze vengono servite con cura su una base di legno che spinge alla convivialità. Una realtà che punta a costruirsi una propria identità invece di replicare altri modelli. Ed è questo il pregio del progetto: fusone fra culture e stili diversi che ha alla base la gioia della pizza. A sort of twinning between Italy and France: the base is obviously the round pizza, obtained from a good leavening and careful cooking in a wood-fired oven. On top, in addition to the classics, many fresh ingredients according to the proposal, from vegetables to mushrooms, always paired with extreme precision and knowledge and not randomly placed. The atmosphere is nice, with a bar full of proposals for any type of pairing, the room is festive, with attentive and scrupulous service. The pizzas are served with care on a wooden base that encourages conviviality. A reality that aims to build its own identity instead of replicating other models. And this is the merit of the project: fusion of different cultures and styles that is based on the joy of pizza.
