Start off with a slice of house-made sourdough bread; oven-fresh and low on salt, with a nutty, thick crust, it’s a well-suited vehicle for Jord’s moreish butter and house-made herb salt. Continue with the sprightly, lightly dressed Waldorf salad served with a crunch of pleasantly earthy toasted walnuts. The fried Baltic herring with potato puré is also a winner, it comes with pickled red coleslaw that adds a lovely acidity to this classic dish.
