Butcher & Still

Butcher & Still is a proper, bona fide steak restaurant where beef reigns supreme. A favourite among steak connoisseurs, head chef Marshall Allen Röth spares no effort to well-suited his beefy output. Celebrating its ninth year in 2026, the restaurant continues to attract locals and tourists alike, thanks to the charm of its old-school, Art Deco, Chicago-inspired design. However, there is a sense that the restaurant lacks the contemporary polish of newer establishments, as steakhouses across the wider UAE are emerging rapidly and ready to compete, which could be a concern for a flagship Four Seasons restaurant. A menu dominated by the beautiful marbled cuts of fatty cow, enjoyed with increasing enthusiasm across the capital, Butcher & Still is, of course, predominantly carnivorous, with fried chicken nights on Wednesdays also making it a popular evening out for families and friends. The main courses are the highlights, offering a wide selection of prime beef cuts. There are fish, chicken and veg options, too, but steak remains the star attraction, bursting with flavour from a generous butter basting and precise marbling on the more expensive cuts. Outside the dining room, the restaurant features a stylish 1920s-inspired bar where bartenders craft classic cocktails using a rare Imperial Martini shaker. Meanwhile, a private dining room-slash-speakeasy, modelled after Al Capone’s Eastern State Penitentiary’s cell, offers an exclusive retreat. The service is smiley and congenial, but struggles to match the personality of chef Röth, who does work the dining room floor as if striding the stage.
