Chef Alex Carrasco's intimate West Adams restaurant earned recognition through an unwavering commitment to handcrafted excellence and creative storytelling. Carrasco's journey from Mexico City's streets to Los Angeles kitchens, including Osteria Mozza and Scratch Bar, culminated in this deeply personal project.

Opening in 2019 with just $25,000 and boundless creativity, the chef personally constructed tables, painted murals, and even negotiated peaceful coexistence with the neighboring bee colony that inspired the restaurant's name. That hands-on approach reflects throughout every element. The cuisine extends beyond traditional taqueria boundaries through meticulous technique and unexpected ingredients.

Handmade tortillas arrive in heirloom white corn, lively beet, and dramatic squid ink varieties, cradling inventive fillings that honor Mexican tradition while embracing modern sensibilities. The chicken taco showcases red mole, garnished with purple spinach and shaved red onion. The taco omakase presents bone marrow-topped steak tacos with grasshoppers, squid ink tortillas filled with huitlacoche and black truffles, and other creative combinations.

Bee Taqueria's atmosphere balances street food authenticity with artistic sophistication. The open-air courtyard features picnic tables illuminated by string lights, while a blazing fire pit creates intimate gathering spaces well-suited for California's climate. Colorful murals painted by Carrasco and collaborators transform walls into lively canvases celebrating Mexican culture.

The visible charcoal grill station anchors the room, where slow-braised meats and roasted vegetables develop deep flavor through traditional techniques.
