At Viceroy Los Cabos, the four on-site restaurants share a stated commitment to organic ingredients, which the property applies as a baseline rather than a talking point for one signature outlet. Especially architecturally notable among the four is Nido, a sushi concept whose indoor-outdoor structure takes its name from the Spanish word for nest. The space sits over water in front of the beach, and the design, an open canopy frame above sea-level footings, makes the sourcing orientation legible in physical terms: the restaurant exists in the environment it draws from.
