JUSTIN is the polished, full-day Paso Robles estate for travelers who want wine, food and hospitality in one place. The estate is the right choice for vineyard tours, caves, a seated tasting, lunch, The Restaurant at JUSTIN or an overnight stay. The downtown room is easier when you want to taste beside City Park without driving out Chimney Rock Road.
The winery's identity is built around Bordeaux-style reds, especially ISOSCELES, but the visit now extends well beyond a basic flight. The decision is less “should I visit JUSTIN?” than “which JUSTIN experience fits the day?”
Experiences, hours, membership benefits, dining distinctions and contact details were checked on August 17, 2026. Availability and menus can change; reserve through JUSTIN's live booking flow.
| Location | Choose it for | Published hours | Tradeoff |
|---|---|---|---|
| JUSTIN Estate 11680 Chimney Rock Road | Vineyards, caves, specialized tastings, lunch, dinner and JUST Inn | Tasting room daily, 11:00 a.m. to 5:00 p.m. | Requires a drive from central Paso Robles |
| JUSTIN Downtown 811 12th Street | Tasting flights, wine by the glass or bottle and food beside City Park | Sun, Thu noon, 6:00 p.m.; Fri noon, 8:00 p.m.; Sat 11:00 a.m. to 8:00 p.m. | No vineyard or cave setting |
The official contact page publishes those hours and the reservations number, 805-591-3224. The downtown page also confirms its tasting bar, dining room and current food-and-wine format. Holiday and event schedules may supersede normal hours, so use the live page for the date you intend to visit.
The current estate page lists several distinct formats. An Estate Wine Tasting is the direct introduction, with Wine Guides covering the winery's history and current selections. The Estate Wine Tasting and Lunch pairs that flight with the seasonal à la carte lunch menu, currently published for Thursday through Monday from 11:00 a.m. to 2:30 p.m.
For a deeper session, Blind Taste Like a Somm is a 90-minute program in the ISOSCELES Library. The Heritage Flight draws from a rotating selection of limited library vintages. A Luxury Vineyard Tour and Premium Tasting takes up to five guests into the founder's estate vineyards.
The Cave Tour and Barrel Tasting is a one-hour guided cellar visit that culminates in tasting the newest ISOSCELES vintage from barrel. Chocolatier for a Day is a three-hour chocolate-making and wine-pairing program. An Edible Garden Tour and Tea Blending experience focuses on the chef garden. These are named products with limited seats, not guaranteed daily activities; check the reservation calendar.

JUSTIN planted its first Paso Robles vineyard in 1981 with the stated goal of making Bordeaux-style blends. The first vintage of ISOSCELES followed in 1987. The wine remains the estate's flagship and is based on Cabernet Sauvignon supported by Cabernet Franc and Merlot; the proportions change by vintage.
That makes an ISOSCELES comparison more useful than treating every red as interchangeable. Ask which vintage is in the current flight, whether a library wine is included and how the blend differs from the estate Cabernet Sauvignon. For collectors, the Heritage Flight is the relevant route when available.
We would not promise that a given standard tasting includes ISOSCELES, a barrel sample or a particular library vintage. Those details belong to the exact experience shown at booking.
Lunch and dinner are separate decisions. Estate lunch is seasonal and à la carte, making it practical to attach to a daytime tasting. The Restaurant at JUSTIN is a destination dinner led by Executive Chef Rachel Haggstrom, with a single tasting-menu format described by Michelin.
Michelin's current listing awards the restaurant one Star. Michelin's 2025 California distinctions also include it among the Green Star restaurants. JUSTIN currently publishes dinner reservations Thursday through Sunday from 6:30 to 9:00 p.m. Recognition and hours can change, so the dated source check matters.
The garden, orchard, herbs, edible flowers and apiary are not just decorative language: Michelin describes sourcing from the estate and nearby Central Coast purveyors. Still, do not assume a specific dish, course count or pairing until the current menu and reservation terms are reviewed.

JUSTIN's current visit page says JUST Inn overnight stays include a bottle of JUSTIN wine, breakfast, a complimentary tasting and turndown service. The inn makes sense when dinner is central to the plan or when you want to avoid turning the estate into a rushed day trip.
Confirm the exact suite, accessibility features, cancellation policy and inclusions in the selected rate plan. A general inn description is not a guarantee that every specialized tasting, tour or dining experience is bundled into the room.
The estate page currently says the Estate Tasting flight fee is waived for a Wine Society member and three guests. Members can also request the Wine Society Lounge, which overlooks the caves and pours limited-release wines.
Those benefits can be meaningful for a repeat visitor, but membership terms can change. Check shipment commitments, discounts, guest limits and cancellation rules before joining rather than valuing the club only by one waived flight.
The estate address is 11680 Chimney Rock Road, Paso Robles, CA 93446. The word “Chimney Rock” here is a street name, not a reference to the Napa Valley winery. The downtown address is 811 12th Street.
If dinner is booked, avoid treating every earlier tasting as a warm-up. A focused flight followed by water and time is usually more useful than trying to sample the whole portfolio before a wine-paired menu. California tasting-room pours still count as alcohol, and a driver should remain able to drive safely regardless of how polished or educational the service feels.
First-time visitor: Estate Wine Tasting plus lunch. It gives context without consuming the entire day.
Collector: Heritage Flight, subject to the current library selection.
Technical learner: Cave Tour and Barrel Tasting or Blind Taste Like a Somm.
Food-led trip: an estate tasting, then The Restaurant at JUSTIN, with JUST Inn if the budget and availability align.
Short downtown stop: a flight or glass at JUSTIN Downtown rather than driving to the estate for a compressed visit.
