Elysium
In the Valle de Lecrín outside Granada, Elysium operates inside a restored mansion as the dining room of a boutique hotel of the same name. Chef Michael Sandoval, trained under Thomas Keller, runs two tasting menus that blend contemporary technique with Latin American inflections, including a La Loja Rainbow Trout Aguachile finished with tequila. The setting is as much a draw as the plate.
