Sud in Quarto is a Michelin-starred southern Italian restaurant centered on seafood-led tasting menus. Notable dishes include a surprise seafood course of local fish with citrus and extra-virgin olive oil, a housemade pasta course highlighting clams and seasonal citrus, and a vegetable-focused course that celebrates Quarto produce. Chef Marianna Vitale composes two set options — seven or twelve courses — that change with the catch and market. Sommelier Pino Esposito pairs Campanian wines to each course. Expect precise, ingredient-driven cooking, an open-kitchen view, and tactile plating that balances texture and brightness.
