Domaine du Pas de l’Escalette belongs to the cooler, higher-altitude argument for Languedoc: limestone terraces, dry-stone walls, organic and Biodyvin-certified biodynamic farming, and estate-grown fruit rather than purchased grapes. Its interest is less cellar spectacle than terroir clarity, with Grenache, Cinsault, Carignan, Syrah, Mourvèdre and southern white varieties shaped by the Terrasses du Larzac’s elevation.
