A small Jura estate in Mathenay, Domaine de Saint Pierre reads through soil rather than spectacle: clay, limestone and grey marl, worked through organic viticulture, indigenous yeasts and minimal sulfur. Fabrice Dodane’s cellar gives equal weight to Jura’s oxidative tradition and the fresher ouillé idiom, with Chardonnay, Savagnin, Poulsard, Pinot Noir and Trousseau carrying the argument.
