Celler La Salada belongs to the low-intervention edge of DO Penedès, where old family vines, native Catalan varieties and biodynamic farming matter more than polish. Founded in 2012 by Toni Carbó, the small estate works Xarel·lo, Macabeu, Malvasia de Sitges, Sumoll and Grenache Blanc into still, orange, skin-contact and pét-nat styles shaped by Pla del Penedès rather than cellar cosmetics.
