Pilgrimme sits on Galiano Island, British Columbia, operating at the precise intersection where geography becomes menu. The restaurant draws almost entirely from what the island and surrounding Gulf Islands waters produce, placing it within a small cohort of Canadian destination dining rooms where the journey to reach the table is inseparable from what arrives on it. Comparable in ambition to Eigensinn Farm or Fogo Island Inn, but rooted in Pacific Northwest terroir.
